In any dining environment making our establishment appealing to customers is critical. Part of that appeal is making your offer very clear. The customer is looking for service and it must be our daily “mantra” to make it easy for them at a glance to know what to do next.

For example, is it clear what type of restaurant you are i.e. French, Fast Food, Chinese and the type of price range for dishes served? Is it clear that you are offering self service or table service? Is it clear to customers that they need to wait to be seated or walk right in and take any table they like?

In a self service environment
Have you got the flow right? As soon as people enter can they see the delicious variety of food and beverages available. As customers move from one station to the next is there a natural flow to the signage advertising what is coming next. For example; sandwiches & cold snacks, beverages, Deli, Hot choices, puddings and cakes. Location signage is vital for your customer traffic flow and for planting subliminal messages that say this is where you are now so what kind of drink are you going to have? Secondary messaging takes over with different signage that offers a menu of beverages for the customer to choose from.

One of the mistakes many self service establishments make is not to have items priced clearly. If it is not priced then the customer is less likely to buy it. The last thing you want as a customer is to reach the cashier and find that you don’t have enough money on you and the meal was more than expected.

Waiter Service
As a customer there is nothing nicer than sitting at a table surveying those around you and then picking up a menu to see what there is to wet your appetite. There is nothing worse than to sit down and find no menu or that there is a menu but the drinks menu is separate and not on the table. Make it easier for you and your customer by avoiding the need for them to hunt down a waiter for the menu. The customer has some time to read the menu and buys you some time on a busy day. When you reach your customer, they are ready to order or will at least have made some choices to discuss with you and get recommendations.
If customers need to be seated, this allows you to personally hand menus to customers and to brief them on the specials of the day or changes to the menu. If this is the case, all waiting staff need to understand the dishes on the menu, anything particularly special and perhaps recommendations for wines to have. If you are passionate about your food then having tasting sessions with your staff will without doubt increase your sales through their ability to communicate with passion!

Design and style of communication
Signage and menu boards need to be in keeping with the food offering and the image of your restaurant or cafe. This helps to manage and exceed expectations. Well presented menus should be clean, neat, easy to read with clear pricing or special notes (i.e when in season). Avoid cut and paste alterations on pricing or cancellations as this looks sloppy and unappealing. Worse still, you are drawing attention to the changes made which can either make the customer want what is now not on the menu or if a price change they are thinking; “how much was it before, are they trying to squeeze more money from me?” Strange but true – I know because – I am a customer!
